Fresh apricots can become something wonderfully useful with just a few basic ingredients and some time at the stove. Homemade apricot jam has a naturally fruity flavor and a pleasantly thick texture that works beautifully on toast, pastries, or simple desserts.
This recipe keeps the ingredient list short, making it a practical choice for anyone trying homemade jam for the first time. The process takes some patience, but the result is a jar of sweet, bright-tasting jam made from fresh fruit.

Ingredients

- 8 cups fresh apricots, peeled, pitted, and crushed
- ¼ cup lemon juice
- 6 cups white sugar
The simplicity of the ingredient list makes this recipe especially approachable. Fresh apricots provide the main flavor, while lemon juice adds a pleasant tart note that balances the sweetness. The sugar helps create the jam's characteristic texture as the mixture cooks and thickens.

Instructions

- Prepare the apricots by peeling, removing the pits, and crushing the fruit.
- Place the prepared apricots and lemon juice in a large saucepan over medium heat.
- Add the sugar and slowly bring the mixture to a boil, stirring regularly until the sugar has completely dissolved.
- Continue cooking the mixture while stirring until it thickens, which takes about 25 minutes according to the recipe. If foam develops on the surface, carefully remove it.
- While the jam cooks, prepare five 1-pint jars with their lids and rings. Clean and sterilize the jars using a dishwasher or boiling-water bath, and keep the lids in simmering water until they are ready to use.
- Carefully transfer the hot jam into the hot sterilized jars, leaving about ¼ inch of space at the top.
- Wipe the jar rims with a clean, damp paper towel to remove any jam or residue.
- Place the lids on the jars and secure the rings.
- Place a rack at the bottom of a large deep pan and add enough water to fill it halfway. Bring the water to a boil.
- Carefully lower the filled jars into the deep pan, leaving space between them. If necessary, add more boiling water until the jars are covered by at least 1 inch of water.
- Cover the deep pan and process the jars in the boiling water for 15 minutes.
- Remove the jars carefully and place them several inches apart on a cloth-covered or wooden surface. Allow them to cool completely.
- Once cool, check each lid to make sure it is firmly sealed and does not move when pressed.
- Store properly sealed jars in a cool, dark area.

Tips for a Better Batch

The consistency of homemade jam depends heavily on cooking time, so avoid rushing the process. The apricot mixture needs enough time to thicken, but it should still be stirred regularly to prevent the fruit from sticking to the bottom of the saucepan.
Using ripe, flavorful apricots can also make a noticeable difference in the finished jam. Since the recipe contains only three main ingredients, the character of the fruit remains easy to taste.
Pay close attention to the preserving steps if preparing jars for storage. Clean and properly sterilized jars are important, and each lid should be checked after cooling. If a jar does not form a proper seal, it should not be treated like a properly sealed jar for long-term storage.

Ways to Enjoy Apricot Jam

There are plenty of simple ways to use homemade apricot jam. Spread it over toast for an easy breakfast, spoon it onto freshly baked pastries, or use a small amount to add fruity sweetness to desserts.
It can also be served as part of a simple afternoon snack. Because the flavor is both sweet and lightly tart, apricot jam can complement foods with mild, buttery, or lightly spiced flavors without overwhelming them.
Making apricot jam at home does not require an elaborate ingredient list. Fresh apricots, lemon juice, sugar, and careful cooking are enough to create a flavorful preserve with a smooth, spoonable consistency. With a little patience, this straightforward recipe can turn fresh apricots into a useful homemade favorite.
