Fish sticks are easy to associate with quick meals, but making a small batch at home can offer a fresher texture and more control over the seasoning. This single-serving version uses a simple coating to create a crisp exterior around tender pieces of fish.
The preparation is straightforward, though allowing the coated pieces to rest before cooking helps the crust stay attached.

Ingredients

For the fish:
5 ounces white fish fillet, boneless and skinless
¼ teaspoon salt
⅛ teaspoon black pepper
1 tablespoon all-purpose flour
1 large egg
½ cup panko breadcrumbs
¼ teaspoon paprika
Vegetable oil, for cooking
For serving:
2 tablespoons mayonnaise
1 teaspoon lemon juice
½ teaspoon mustard
Lemon wedges, optional

Preparing the Fish

Pat the fish dry with paper towels before cutting it. Removing excess moisture helps the coating adhere more effectively and reduces the chance of the surface becoming soggy during cooking. Cut the fillet into evenly sized pieces. They do not need to have a perfect shape, but keeping them similar in thickness helps them cook at approximately the same rate.
Season the fish lightly with salt and black pepper. Keep the seasoning moderate because the crumb mixture and dipping sauce will contribute additional flavor.

Creating the Coating

Set up three shallow dishes for an easy coating station. Place the flour in the first, beaten egg in the second, and breadcrumbs mixed with paprika in the third. Instructions

4. Place the flour, beaten egg, and seasoned breadcrumbs in three separate shallow dishes.
5. Coat each fish in flour, then dip it into the egg.
6. Press each piece into the breadcrumbs, covering all sides.
7. Arrange the coated fish in a single layer and refrigerate for about one hour.
8. Heat a thin layer of vegetable oil in a skillet over medium heat.
9. Carefully place the coated fish pieces into the hot oil without overcrowding the skillet.
10. Cook for several minutes on the first side until the coating becomes golden and crisp.
11. Turn the pieces carefully and continue cooking until the second side is browned and the fish is cooked through.
12. Transfer the fish sticks to a paper towel-lined plate to remove excess oil.
13. Stir together the mayonnaise, lemon juice, and mustard for a quick dipping sauce.
14. Serve the fish sticks immediately with the sauce and lemon wedges if desired.

Choosing a Dipping Sauce

A creamy sauce with a little acidity provides a simple contrast to the crisp coating. Mayonnaise mixed with lemon juice and mustard takes only a minute to prepare and does not require additional cooking.
