A butternut squash latte brings a smooth, lightly sweet twist to a familiar coffee drink. The recipe combines butternut squash puree with whole milk, brown sugar, cardamom, and allspice, creating a warm and gently spiced mixture to pair with freshly brewed espresso or coffee.
A cinnamon stick provides a simple finishing touch. It takes only about 10 minutes from preparation to serving, making it an easy homemade option when a cozy drink is wanted.
Ingredients
6 oz. whole milk
1 cardamom pod
2 Tbsp. store-bought butternut squash puree
1 Tbsp. light brown sugar
1 tsp. allspice berries
1 1/2 oz. freshly brewed espresso or 2 oz. freshly brewed coffee
A pinch of kosher salt
1 cinnamon stick, for garnish
Preparation time: 5 minutes
Total time: 10 minutes
Serves: 1
Instructions
1. Pour the milk into a medium saucepan and add the cardamom pod, butternut squash puree, brown sugar, and allspice berries.
2. Warm the mixture over medium heat until it reaches a gentle simmer. Stir occasionally to help the squash and brown sugar blend smoothly into the milk.
3. Remove the saucepan from the heat and allow the mixture to rest for 5 minutes. This gives the whole spices time to infuse the warm milk.
4. Pour the mixture through a fine-mesh sieve into a small bowl. This removes the cardamom pod and allspice berries, leaving a smooth, flavored milk mixture.
5. For a foamy texture, use a milk frother or a small whisk to aerate the mixture until it becomes lightly frothy.
6. Pour the freshly brewed espresso into a mug. If using brewed coffee instead, pour it into the mug at this stage. Stir in the pinch of kosher salt.
7. Slowly add the warm squash-infused milk over the coffee, allowing the foam to collect on the surface.
8. Finish with a cinnamon stick and serve immediately while the latte is warm.
The Butternut Squash Base
The key ingredient is butternut squash puree, which gives the latte its distinctive flavor and smooth consistency. Because the recipe uses a relatively small amount, the squash does not overpower the coffee. Instead, it blends into the milk with the brown sugar and spices. Using ready-made butternut squash puree also keeps preparation quick. There is no need to cook and puree fresh squash specifically for this drink, which makes the recipe practical when only one serving is needed.
Why Use Whole Spices?
Cardamom and allspice are added in whole form and removed before the drink is assembled. This approach allows their flavors to infuse the milk without leaving pieces of spice in the finished latte. The five-minute resting period after heating is useful because it gives the warm mixture additional time to take on the spice flavors. Straining afterward creates a cleaner texture and a smoother drinking experience.
Making the Milk Frothy
Foaming the milk mixture is optional, but it can give the latte a lighter finish. A dedicated milk frother is convenient, while a small whisk can also work. Whisk or froth the mixture after straining it. Since the squash and spices have already been incorporated, this step focuses on adding air and creating a soft layer of foam.
Choosing the Coffee
The recipe can be made with either freshly brewed espresso or freshly brewed coffee. Espresso provides a concentrated coffee base, while brewed coffee offers another straightforward option. Whichever coffee is used, prepare it shortly before assembling the latte. The coffee goes into the mug first, followed by the seasoned milk mixture. A small pinch of kosher salt is stirred into the coffee before the milk is added.
This butternut squash latte offers a simple alternative to more familiar spiced coffee drinks. Butternut squash puree, brown sugar, cardamom, and allspice create its main flavor, while freshly brewed coffee provides the familiar base. The preparation is short, and straining the infused milk keeps the finished drink smooth. With a cinnamon stick as the final touch, this recipe makes one warm, gently spiced latte in about 10 minutes.
