Toffee apple Basque cheesecake combines a creamy filling, a beautifully browned surface, and tender apples coated in a rich toffee sauce.
Unlike traditional cheesecakes, the Basque version does not require a biscuit base. Its signature appearance comes from baking at a high temperature, creating a dark top while keeping the centre soft.
Ingredients
For the cheesecake:
750 g cream cheese, softened
220 g caster sugar
1½ tsp vanilla paste
4 large eggs
1 egg yolk
300 ml double cream
1 tsp fine sea salt
20 g plain flour
For the toffee apples:
3 medium apples
60 g butter
80 g dark brown sugar
½ tsp ground cinnamon
120 ml double cream
A small pinch of salt, optional
Servings: 12
Preparation time: 15 minutes
Cooking time: 40–50 minutes
Chilling time: Overnight
Instructions
1. Preheat the oven to 240°C, or 220°C for a fan oven. Line a deep 20 cm round cake tin with two crumpled sheets of baking paper, allowing the paper to extend above the rim.
2. Beat the softened cream cheese, caster sugar, and vanilla paste in a large bowl until smooth.
3. Add the eggs one at a time, mixing gently after each addition. Stir in the extra egg yolk, double cream, and salt.
4. Transfer a small amount of the mixture to another bowl. Mix in the flour until smooth, then return it to the main mixture and stir until combined.
5. Pour the filling into the prepared tin. Bake for 35–40 minutes, until the surface is deeply browned and the centre still wobbles slightly when the tin is moved.
6. Remove the cheesecake from the oven and let it cool completely. Refrigerate overnight to help the filling set.
7. To prepare the topping, peel, core, and slice the apples into thick wedges. Melt the butter in a frying pan over medium heat.
8. Add the apples and cook for three to four minutes, turning gently until they begin to soften.
9. Sprinkle in the brown sugar and cinnamon. Stir until the sugar melts, then pour in the cream. Simmer briefly until the sauce becomes smooth and glossy. Add a small pinch of salt if desired, then remove from the heat.
10. Allow the topping to cool slightly before spooning it over the chilled cheesecake. Drizzle with the toffee sauce and serve any extra sauce separately.
Tips for the Best Results
Use cream cheese that has softened at room temperature to prevent lumps. Mix the filling gently after adding the eggs, as excessive beating can introduce too much air. Do not wait for the centre to become completely firm in the oven. The cheesecake will continue setting as it cools, and a slight wobble helps preserve its creamy texture.
Choose firm apples that hold their shape during cooking. Avoid overcooking them, as the slices should remain intact rather than becoming mushy. Preparing the topping shortly before serving also helps maintain its glossy appearance.
Serving and Storage
For neat slices, cut the cheesecake while chilled, wiping the blade between cuts. Add the apple topping just before serving to keep the sauce looking fresh. Store leftovers in a covered container in the refrigerator and enjoy within a few days. Keep extra toffee sauce separate when possible, adding it to individual portions as needed.
Toffee apple Basque cheesecake brings together a creamy centre, a toasted surface, soft apples, and buttery sauce in one inviting dessert. Its rustic appearance makes it less demanding than a traditional smooth cheesecake, while careful baking and overnight chilling help deliver a satisfying texture. Serve it at a gathering or enjoy a slice at home for a comforting sweet treat.
