A satisfying pasta dinner does not need a long ingredient list or complicated preparation. Roasting leeks until soft and golden brings out their natural sweetness, while warm feta creates a creamy, tangy coating for pasta.
A squeeze of lemon and a handful of fresh spring onions finish the dish with brightness and crunch. With most of the cooking handled by the oven, this recipe is a practical choice for busy evenings when a comforting homemade meal sounds appealing.
Ingredients
850 g leeks, approximately 2 large, trimmed and thinly sliced
5 spring onions, washed and trimmed
2 tablespoons extra-virgin olive oil, plus extra for finishing
200 g feta cheese
500 g short pasta, such as penne or fusilli
1 lemon, halved
1 teaspoon salt, plus extra as needed
Freshly ground black pepper, to taste
Preparation time: 10 minutes
Cooking time: 50 minutes
Servings: 4–6
Instructions
1. Heat the oven. Preheat the oven to 200°C. Prepare a large baking tray, using baking paper if desired. Slice the leeks thinly and rinse them thoroughly to remove any trapped soil. Drain and pat away excess water.
2. Prepare the vegetables. Cut three spring onions into pieces approximately 5 cm long. Place them on the tray with the sliced leeks. Add the olive oil, salt, and a generous amount of black pepper. Toss everything until the vegetables are lightly coated, then spread them into an even layer.
3. Roast until softened. Cover the tray tightly with foil and bake for 15 minutes. Remove the foil and continue roasting for another 15 minutes. The leeks should begin to soften and develop golden edges. Stir them gently to help them cook evenly.
4. Cook the pasta. While the vegetables roast, bring a large bowl of salted water to a boil. Add the pasta and cook according to the package instructions until just tender. Drain well, reserving a small cup of the cooking water in case the finished dish needs extra moisture.
5. Bake the feta. Move the roasted vegetables toward the edges of the tray to create space in the middle. Place the feta in the cleared area and drizzle it with a little olive oil. Return the tray to the oven for 12–15 minutes, or until the cheese is hot and softened and the leeks are fully tender.
6. Combine the ingredients. Remove the tray from the oven and add the drained pasta while everything is still warm. Gently toss the ingredients together, breaking the feta into smaller pieces so it coats the pasta. Add a splash of reserved pasta water if the mixture seems dry.
7. Finish and serve. Squeeze lemon juice over the pasta and add another light drizzle of olive oil. Taste and adjust the seasoning. Thinly slice the remaining two spring onions and scatter them over the top before serving in warm bowls.
Tips for the Best Texture
Give the leeks enough time in the oven. Their softened texture is an important part of the dish, and rushing the roasting stage can leave the thicker pieces firm. Spread the vegetables out rather than piling them together, allowing them to cook more evenly. Add the pasta directly to the hot tray instead of transferring the roasted ingredients to a cold bowl. The warmth helps soften the feta and makes it easier to distribute throughout the dish.
Pasta cooking water is useful for loosening the mixture without diluting its flavor too much. For a slightly different finish, add finely grated lemon zest or chopped parsley. Keep additional seasonings simple so the sweetness of the leeks remains noticeable.
Baked leek and feta pasta is an approachable meal built around a few everyday ingredients. Roasting develops the vegetables' sweetness, softened feta adds a creamy texture, and lemon keeps the flavors balanced. The method also leaves room for small adjustments based on personal taste or what is available in the kitchen. Serve it straight from the tray for a relaxed dinner that requires little extra preparation.
