A chilled dessert can be especially appealing when it requires no oven and can be prepared well before serving. This berry and cornbread icebox cake layers crisp corn-based crackers with creamy filling and fresh fruit, creating a dessert that changes texture as it rests.
Strawberries and blueberries bring contrasting flavors, while a small amount of spice gives the fruit more depth. The dessert makes 8 to 10 servings and needs at least eight hours of chilling before serving.
Ingredients
For the layers:
1 package cornbread crisps
2 cups strawberries, sliced
2 cups blueberries
2 cups whipped cream
¼ teaspoon ground five-spice seasoning
¼ teaspoon ground coriander
For serving:
Fresh strawberries, sliced
Fresh blueberries
Additional whipped cream, optional
Preparation time: about 25 minutes
Chilling time: at least 8 hours
Serves: 8 to 10
Preparing the Fruit
Wash and dry the strawberries and blueberries thoroughly before assembling the dessert. Slice the strawberries into pieces that are easy to distribute between the layers while leaving the blueberries whole. Divide the strawberries and blueberries into separate portions. Add a small amount of five-spice seasoning to the strawberries and ground coriander to the blueberries. The spices should remain subtle rather than dominate the fruit.
Preparing the Creamy Layer
The filling should be smooth and easy to spread. If using prepared whipped cream, keep it chilled until assembly. This helps the layers hold their shape more easily. A gentle touch is useful when spreading the cream. Pressing too firmly can break the crisp crackers underneath and make the layers uneven. Use the back of a spoon or a small spatula to create a relatively even surface.
Instructions
1. Wash the strawberries and blueberries, then dry them thoroughly.
2. Slice the strawberries and leave the blueberries whole.
3. Place the strawberries in one bowl and the blueberries in another.
4. Add the five-spice seasoning to the strawberries and gently toss to distribute it.
5. Add the ground coriander to the blueberries and mix carefully.
6. Set aside enough berries for the top of the dessert.
7. Choose a casserole dish with approximately 8 cups of capacity.
8. Arrange a layer of cornbread crisps across the bottom of the dish, breaking pieces when necessary to cover gaps.
9. Spread a layer of whipped cream over the crackers.
10. Add a portion of the seasoned strawberries and blueberries.
11. Repeat the layers of crackers, cream, and fruit until the ingredients are used, finishing with a layer of cream.
12. Arrange the reserved berries over the top.
13. Cover the dish and refrigerate for at least 8 hours.
14. Remove the dessert from the refrigerator shortly before serving and cut or spoon it into portions.
Choosing the Right Dish
A rectangular casserole dish makes layering straightforward, but the exact shape does not have to be identical to the one used here. A dish with roughly 8 cups of capacity provides enough room for several layers without making them excessively thin.
For a dessert that needs to be transferred onto a serving plate, line the dish with plastic wrap before assembling the layers. Leave some excess wrap extending over the edges so the chilled dessert can be lifted more easily. Serving the cake directly from the dish is simpler and also reduces the chance of disturbing the layers.
Serving the Dessert
Serve the chilled cake directly from the casserole dish for the easiest presentation. Each portion should include some creamy filling, fruit, and softened cornbread crisps. For a cleaner presentation, arrange a few fresh berries over the top immediately before serving. This adds color and provides a fresher texture alongside the softer layers underneath.
This no-bake berry dessert offers a convenient alternative to traditional baked cakes. The combination of cornbread crisps, creamy layers, strawberries, and blueberries creates a dessert with changing textures and balanced flavors. Most of the work happens during assembly, while the refrigerator handles the long resting period. Planning ahead is the main requirement, making this an appealing choice when a chilled dessert needs to be prepared in advance.
