Instructions

1. Position an oven rack in the center and preheat the oven to 350°F. Lightly coat a 13-by-9-inch baking dish with cooking spray.
2. Put the eggs into a large bowl and add the milk. Whisk the mixture until the eggs look smooth and slightly airy.
3. Pour the egg mixture into a large skillet over medium-low heat. Stir gently and regularly with a spatula until the eggs are almost fully cooked but still soft, which should take about 2 to 3 minutes.
