Crispy chicken and creamy fettuccine make a satisfying combination of textures. This recipe pairs golden, breaded chicken cutlets with silky Alfredo-style pasta, creating a dinner that feels special without requiring complicated techniques.
The chicken is coated with seasoned panko and Parmesan before being fried until crisp, while the pasta is tossed with a simple cream and Parmesan sauce. The whole meal takes about 55 minutes from start to finish and makes four servings.

1 cup panko breadcrumbs
1 tsp. garlic powder
1/4 tsp. crushed red pepper flakes
2 oz. Parmesan cheese, finely grated and divided
3/4 cup all-purpose flour
Freshly ground black pepper, as needed
2 large eggs
4 chicken cutlets, 4 to 6 oz. each
Vegetable oil, for frying
3 Tbsp. unsalted butter
1 garlic clove, minced
2 cups heavy cream
Fresh parsley, finely chopped, for serving

Instructions
1. Bring a large saucepan of salted water to a boil. Add the fettuccine and cook according to the package directions until al dente. Before draining, reserve 1/4 cup of the pasta water. Drain the noodles and set them aside.
2. Prepare three shallow bowls for the chicken coating. In the first, mix the panko with garlic powder, crushed red pepper flakes, and half of the grated Parmesan. Put the flour in the second bowl and season it with salt and black pepper. Beat the eggs in the third bowl.
3. Season both sides of each chicken cutlet with salt and black pepper. Dip one cutlet into the flour, turning it to coat completely. Shake away excess flour, then dip it into the beaten egg. Finally, press it gently into the seasoned panko mixture until the surface is well covered. Repeat with the remaining chicken.
4. Heat a thin layer of vegetable oil in a large skillet over medium heat. Carefully add the coated chicken and cook for about 3 to 4 minutes on each side, or until the coating is deeply golden and the chicken reaches 165°F internally. Transfer the cooked cutlets to a clean wire rack and allow them to rest briefly.
5. While the chicken rests, prepare the sauce. Melt the butter in a large, deep skillet over medium heat. Add the minced garlic and cook for around 2 minutes, stirring regularly, until fragrant.
6. Pour the heavy cream into the skillet and bring it to a gentle simmer. Continue cooking for approximately 10 minutes, stirring occasionally, until the cream has thickened slightly.
7. Remove the skillet from the heat. Gradually add the remaining Parmesan while whisking continuously. Continue until the cheese melts into a smooth sauce. Season with salt and black pepper if needed.
8. Add the cooked fettuccine to the sauce and toss until the noodles are evenly coated. Stir in about 2 tablespoons of reserved pasta water. If the sauce feels too thick, add a little more pasta water until it reaches a smooth consistency.
9. Slice the crispy chicken into strips. Divide the creamy fettuccine among four plates and arrange the chicken over each serving. Finish with chopped parsley, additional Parmesan, and a little freshly ground black pepper.
Getting the Chicken Crispy
The coating works best when each layer is applied evenly. The flour gives the egg something to cling to, while the egg helps the seasoned panko adhere to the chicken. Pressing the crumbs gently onto the cutlets creates a more secure coating that is less likely to fall away during cooking. Avoid crowding the skillet while frying.
